The indicator on the digital dash showing what gear is currently selected. If it's in Eco then the gears are E1 to E7, Sport is S1 to S7 and normal is D1 to D7. After startup, it always showing gears as D1 to D7, regardless of where the rotary dial is set. If I move the rotary dial, the display/mode synchs up correctly to the dial.

So the led on the selector wheel and the indication on the touchscreen show that it is in sport but the gear indicator tells you it is in normal. Are you sure it is not the instrumentation bit that is wrong and the car is in sport as per selector. Was it a 4 wheel drive to try in offroad. If you ignore the gear indication does the car perform like it is still in sport.

Tony this is how SEAT is dealing with the new emmission rules.... newer vehicle manuals explain how vehicles will reset to "Normal" engine mode on restart.

No idea... but on my 2018 Leon this wasn't even a thing. You put it in Sport, it stayed in Sport.

I have it like this in my Ateca 2017. Even continuing to drive not until on a next day, it stays in Sport mode.

Nope, it's definitely in Normal mode. It does not have the get up and go of sports mode, nor the "coasting-with-the-foot-off-the-gas" action of Eco mode.

I hear what you are saying and can't argue with the evidence of the manual. It kind of makes sense if you leave the car in Sports mode to default back to Normal for emissions sake, but why on earth would SEAT choose to do the same when it's left in Eco mode? Does it create more emission in Eco mode compared to Normal mode? Bizarre.
